Chili & Sichuan Pepper Biang Biang Noodles

Biang biang noodles are one of the oldest and most traditional dishes in Chinese cuisine. It's chewy texture, and spicy flavor have delighted generations across China. These red chili and Sichuan pepper biang biang noodles are prepared according to the most classic traditional recipe.

Classic Chili & Sichuan Biang Biang Noodles

Servings: 2 

2 cups all-purpose flour (no more than 3g of protein)
1/2 cup + 2 Tbsp. water (room temp)
1/4 tsp. salt
vegetable oil, for coating the dough

1 Tbsp. scallions, finely chopped
2 tsp. garlic, minced
1 tsp. chili flakes
1 tsp. ground Sichuan pepper
2 tsp. soy sauce
1 Tbsp. rice vinegar

Distribute the aromatics equally between the two portions of prepared noodles.
Pour hot sizzling oil on top to release the flavor.
